  • 1/2 cup grated Parmesan cheese

For the Caesar Dressing:

  • 1/2 cup mayonnaise (preferably homemade or a brand with no added sugar)
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 2 anchovy fillets, finely chopped (optional)
  • 1 tablespoon Worcestershire sauce
  • Juice of 1 lemon
  • Salt and pepper, to taste

For the Parmesan Crisps:

  • 1 cup grated Parmesan cheese

Instructions:

1. Prepare the Chicken:

  • Season the chicken breasts with salt and pepper on both sides.
  • In a skillet over medium-high heat, add olive oil.
  • Cook the chicken breasts for 5-7 minutes per side or until fully cooked.
  • Remove from heat and let them rest for a few minutes before slicing into thin strips.

2. Make the Caesar Dressing:

  • In a bowl, whisk together mayonnaise, Dijon mustard, minced garlic, chopped anchovies (if using), Worcestershire sauce, and lemon juice.
  • Season the dressing with salt and pepper according to your taste.

3. Prepare the Parmesan Crisps:

  • Preheat your oven to 375°F (190°C).
  • Line a baking sheet with parchment paper.
  • Form small mounds of grated Parmesan cheese on the parchment paper, leaving space between each mound.
  • Flatten each mound slightly to form thin circles.
  • Bake in the preheated oven for 5-7 minutes or until the edges are golden brown.
  • Allow the crisps to cool completely before gently removing them from the parchment paper.

4. Assemble the Salad:

  • In a large bowl, combine the chopped romaine lettuce and cherry tomatoes.
  • Add the sliced chicken on top of the salad.
  • Drizzle the Caesar dressing over the salad and toss until everything is well-coated.
  • Sprinkle the grated Parmesan cheese over the salad.
